Beer braised venison with pickled cauliflower

 

Get an introduction to the New Nordic cuisine Home-style. We will cook our way through some of the most traditional Nordic foods, sometimes adding a modern twist. The first 3-3½ hours we will be cooking dishes like rye bread, cured salmon and danish dessert/cakes, always according to season and using local ingredients from my favorite producers.
You will learn some of the basic flavor combinations and preparation methods of the Nordic cuisine and of course get the recipes with you, so you can cook tasty Scandinavian food in your own kitchen.

Menu example:
Rye bread with seeds and beer
Rillettes of salmon with radish, rye bread chips and cress
Beer braised pork cheeks with fresh chives and dried lingon berries
Crisp kale and grain salad with sour apples and herbs
Apple pudding with skyr cream and malt cookies
+ a little selection of local drinks and specialities.

Duration: 3-4 hours

Level: Beginners

Price: 1500 DKK (pr. person, price reduction if you sign up 3-5 people).

Maximum attendants: 5 people.

Booking terms & Conditions:
All guests needs to personally book the course by email, the contact section or telephone, and it will always need to be confirmed by CPH Good Food.
Info about the course and the venue is provided to the guests about 2-3 days before the event date.
The course can be booked up to a year in advance and down to 3 days before. It is not possible to show up unannounced and participate in a class.
The courses fill up quite fast, so book as early as possible.
Courses can be paid by bank transfer or in cash on the day of the event.

All guests are provided with an apron and guidance during the course to protect themselves and their items, but please note that CPH Good Food/Mia Irene Kristensen can’t be held responsible for any damages on the guests and their items before, during and after the course.

Courses can always be cancelled due to illness, but in case of cancellation by CPH Good Food or the guest less than a week before the event date, it might not be possible to move the course to another day.

Prepaid courses/gift certificate
In case of cancellation by CPH GoodFood of prepaid courses (by bank transfer) a full refund of the course fee is given.
In case of cancellation by the guest less than 3 days before the course, no refund is given.
A refund on gift certificate is only possible the first 14 days from the purchase date, after that no refund is possible.
All gift certificates are valid for 3 years and can be passed on as a gift or sold.
Please write the number on the certificate in the booking email for the course.
